Cook and Hold Ovens are specifically for the slow cook concept. The idea is to cook food at lower temperatures for longer periods of time, thus giving higher yields. Alto Sham Cook and Hold Ovens do this by the "halo heat" method. This essentially is a cabinet that has heating elements within the wall of the cabinet that circles the internal cabinet, giving it the "halo" effect. The downside to this method is the color of the product once it has been removed. Most food service operators will use an au jus of some type to give the product color. The FWE Cook and Hold Ovens use a very low air circulation within the cabinet that will brown the food product, eliminating the grey color look. The Cook and Hold Ovens are rated by the amount of product load it can handle.
