Southbend Convection Oven types within this group are the Standard and Bakery Depth in Single and Double Deck convection ovens. They are marketed as the Marathoner Gold, Silver Star and the Bronze Convection Ovens. Why a Bakery Depth Convection Oven? When a turning of the product is necessary, a bakery depth oven allows a sheet pan to be turned with ease because there is enough space within the oven to do so. It will eliminate taking the pan out and inserting it back into the oven. The basic difference between the Southbend Gold and the Silver Convection Ovens is the BTU rating: the Gold is rated at 90,000 BTU per oven and the Silver Star rated at 72,000 BTU. In all other respects, it is the same convection oven. The Southbend Bronze Convection oven is rated at 54,000 BTU and has a standard control panel with less features.
